How to Make Chocolate Coffee Cake

200g plain purpose flour

50g cocoa powder

1 tsp baking soda and salt

2 tsp espresso powder (optional)

200g granulated sugar

2 large eggs (room temperature)

120ml brewed coffee, cooled

120ml milk

120ml vegetable oil

1 tsp vanilla extract
Instructions:

Preheat the oven to 180°C (160°C fan) and grease your prepared pan.

In a mixing bowl, combine all dry ingredients – flour, cocoa powder, espresso powder, baking soda, and salt.

In another large bowl, whisk wet ingredients – sugar, eggs, milk, oil, coffee, and vanilla.

Gradually mix wet and dry ingredients until smooth.

Pour the batter into the pan and bake for 25–30 minutes or until a toothpick inserted into the centre comes out clean.
